3 lbs. bulk Italian sausage
2 tubs of Homestead Marinara Sauce
2 cans tomato sauce
1/2 lb mozzarella cheese – shredded
1 can black olives – drained
1 green pepper – chopped
1 large onion – chopped
3 stalks celery – chopped
1/2 lb mushrooms
1/4 cup fresh basil – chopped
Garlic to taste
1 1/2 lb pasta (penne or rigatoni)
Prepare pasta according to directions. Drain and set aside.
In large pan brown sausage. Drain grease and remove sausage from pan and set aside.
In same pan drizzle olive oil and sauté onion, celery, mushrooms and green pepper. Drain any liquid that vegetables produce.
In very large bowl mix all ingredients together until well blended. Transfer to large casserole dish (may need two). Top with Parmesan cheese and cover with foil.
Bake at 350 for 30 – 40 minutes. Uncover to let top slightly brown last 5 – 10 minutes.
